Christmas Celebration!



On Thursday December 18th we had our Christmas Party for all friends and family to come! We had a wonderful turn out. The kitchen served a wonderful selection of food, Sister Mary Ellen played the piano while everyone enjoyed the food. We watch slideshow of all of our fun activities that we have done through out the year. And last but not least we had our gifts to each and every client from there secret santa! Everyone had a great time! We are so happy that everyone could make it.

Banana Cake

Banana Cake (from Mom’s Who Think)
Ingredients:
1/2 cup butter1 1/2 cups sugar 2 large eggs, beaten 2 cups flour, sifted 1/2 tsp. of salt 1/4 tsp. baking powder 1/2 cup milk 1/4 tsp. vanilla 3/4 tsp. baking soda (add to pureed bananas) 3 pureed bananas, very ripe
Cream Cheese Frosting:
1/2 stick butter, softened8 oz. cream cheese, softened 1 box powdered sugar (1 lb.) 2 tsp. vanilla extract
Directions:
1. Preheat oven to 350 degrees. Grease and flour a 9x13" baking pan or two 9" layer cake pans.
2. Cream butter, sugar and eggs. Sift flour several times, then add the salt and baking powder to the flour.
3. To the creamed butter mixture, add the milk and flour (alternating, beginning and ending with flour).
4. Add vanilla and mashed bananas (with the baking soda added to the bananas) to this mixture.
5. Bake layer cakes (9") for 25-30 minutes, oblong (9x13") for 35-40 minutes.
Frosting Directions:
1. Mix cream cheese and butter until smooth, add sugar and vanilla and blend well. Spread on cooled cake.

Busy Tuesday


Tuesdays are a busy day around here. We have all different activies for everyone to enjoy. Here are just a few.


Cards


While the ladies are busy in the kitchen making snack and getting manicures, Bobbi sits down with Elmer to play a fun game of Kings Corner, that is a crowd favorite!

Spritz

One day last week we received a wonderful donation from a fellow employee, a wonderful pampered chef cookie press among other great utensils. So what better way to celebrate this great donation was to make some spritz cookies for everyone to enjoy!


Classic Spritz Cookies:

1 1/2 cups butter (3 sticks), softened
1 cup sugar
1 egg
1 tsp vanilla extract
3 1/2 cups all-purpose flour
Colored sugar or sprinkles (optional)
1. Preheat oven to 375°F (190°C). In large mixing bowl, beat butter and sugar on medium speed of electric mixer about 3 minutes or until creamy, scraping down sides as necessary. Add egg and vanilla; beat well. Add flour; mix on low speed just until blended, scraping down sides as necessary. (Dough will be soft; do not refrigerate.)
2. Fit Cookie Press with desired disk (see Cook's Tip); fill with dough. Press dough onto Cookie Sheet 1 in. (2.5 cm) apart. Decorate cookies with colored sugar or sprinkles, if desired. Bake 10-12 minutes or until edges are light golden brown. Cool cookies 2 minutes on Cookie Sheet; remove to cooling rack. Repeat with remaining dough.
Yield: 6-7 dozen cookies

Our ladies love to be pampered, what better way then with a nice manicure from our wonderful volunteer Beverly! It just sets the mood for all the ladies makes then feel so nice!

Russian Tea


Russian Tea:

1/2 cup Instant tea

2cup Tang Orange Drink

1 pkg. Lemonade mix

1 tsp. Cinnamon

1/2 tsp. cloves

1cup sugar


Mix all ing. together. For serving, place 1 well rounded teaspoon of mix in a cup of boiling water. Stir until dissolved.

1/3c. of mix makes about 1 quart of drink. Store in tightly covered jar and it will keep for weeks.

Book Club


Monday Morning we started a new book,"Little Women." We read every Monday before lunch. Once we have finished the book we will enjoy the movie!

This afternoon we put all of our tables together and set out all different projects for everyone to do. Some painted, and colored. While others made a mitten wreath. Doing different projects is something they all love to do!

11/28/2009 Richard celebrated his 78th birthday! Being that is birthday was over thanksgiving weekend, we celebrated his birthday the thursday after with some chocolate cake and ice cream! Happy Birthday Richard!

My little Helper!

If you think good old whoopie pies just can't be improved upon, just wait until you try these: pumpkin cookies filled with fluffy cream cheese frosting. They're guaranteed to be a popular new addition to your standard Thanksgiving dessert offerings. They are so good! Janet and I spent the morning making this yummy dessert for our Thanksgiving Day Celebration!
PUMPKIN COOKIES
2 eggs
2 cups light brown sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1 (15-ounce) can pumpkin
3 cups flour
1 tablespoon pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
FILLING/CREAM CHEESE FROSTING
4 ounces cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla extract
4 to 5 cups confectioners' sugar

Instructions:
Heat the oven to 350 degrees. Beat the eggs, brown sugar, oil, and vanilla extract in a mixing bowl until smooth. Stir in the pumpkin. In a separate bowl, combine the flour, pumpkin spice, baking powder, baking soda, and salt. Add the dry ingredients to the egg mixture a half cup at a time, blending each time until smooth.
Drop a heaping tablespoon of batter onto an ungreased cookie sheet, using a moist finger or the back of a spoon to slightly flatten each mound. Bake the cookies for 12 minutes, then transfer them to a wire rack to cool completely.
Meanwhile, make the frosting. Beat together the cream cheese, butter, and vanilla extract in a bowl until light and fluffy. Mix in the confectioners' sugar a half cup at a time, until the frosting is spreadable.
To assemble the pies, turn half of the cookies bottom side up and spread a generous amount of cream cheese frosting on each one. Top them with the remaining cookies (turned right side up). Makes 10 to 14 Pilgrim Pies.

Art Project

Today we had our clients busy painting fun thanksgiving pictures!

Thanksgiving Celebration 2009


Today we did our second annual Thanksgiving day celebration for all of our clients. We had Turkey, Mashed Potatoes, Gravy, Stuffing, Veggies, Dinner Roll, and Pumpkin Pie for dessert! They all had a fun time enjoying there meal and reminiscing among each other about old times!

Crafty Friday!

Our Friday craft project was all about thanksgiving. Everyone made there own lanterns. All you needed was glue, red, yellow, and orange tissue paper, brown paper for the turkey body and a battery operated tea light. You can see in the video how they turned out!

This time around for our once a month cooking demo, they did Chicken Stir Fry and boy was it a hit with all the clients! We are still doing low sodium meals!

A fun Friday Night....


Pat came in Monday morning bright eyed and bushy tailed with her 1st place trophy that she had won over the weekend playing the card game 313 with residence in her building. She was so proud! Great job!

Enjoying the Outdoors....

Monday afternoon was such a beautiful day! We brought out our bonfire pit and made S'mores, who would of thought on November 9Th we could be sitting outside in light jackets and roasting marshmallows, it was so much fun. We also invited staff and any residence to come on down and enjoy it as well.

Prayer Group


On the first and third Thursday of each month, we have Deacon Don come and do a prayer group with our clients. We have a prayer box that all of our clients can put any prayers they have in there to bring to the cirlce for everyone to pray for.

Outing


This afternoon a small group of our clients and residents from our Memory Care/Assisted Living Floor went to the Minneapolis Institute of Art to tour art designed for seniors with Memory Loss. They all had a great time and thought it was very interesting!

Land of OZ

10/27/2009: Land of OZ is a Halloween tradition for the Marian of Saint Paul Campus. Our recreation staff and many volunteers work very hard to get our Marian Hall decorated just like the wizard of OZ. It is a fun event for all to enjoy. On Tuesday October 27Th, we had a client of ours and other residence dress up in character. Many staff and other residence followed the yellow brick road to the wonderful Land of OZ.

Thursday October 29Th, is the big night event were everyone is invited to come follow the yellow brick road to see Dorothy, Toto, Tin Man, The Scarecrow, The Lion, Lollipop Kids, and much more. We had approximately 400 people come through that evening to Trick or Treat. Thank you to everyone who helped out with the event and donated candy! See you all next year!

Ruag on the Voyager

Every Tuesday we have the Voyager for the day it is a computer program for individual or group use. It has everything on it, games, email, funny videos, history, karaoke, old Johnny Carson shows, how its made and much much more. A group favorite is Deal or No Deal! This is Ruag watching his favorite president on the big screen John F. Kennedy. He loves history!

Men's Group

Tuesday Afternoon we had all of men gather together with our volunteer Paul for our new men's group. They all enjoyed reminiscing old times with nice cold beer, soda, and snacks.

Line Dancing


Tuesday afternoon Bobbi and I took a group of ladies down to Marian Hall Cinema to watch a video to learn how to Line Dance! We all had a fun time learning all the basic steps for line dancing.

Casino Outing

11/4/2009: A group of 8 of our clients and 2 Volunteers and 1 staff headed out to Treasure Island Resort and Casino. The Treasure Island bus arrived at 9:30am to arrive at the casino and 10:00am to start there fun day of gambling. They all returned safe around 2:45pm with there winnings. We hope to return soon.

3/4cup light corn syrup

3tablespoons vinegar

1/3cup boiling water

1/2cup butter

Dash of salt

Wooden skewers

Fruit-flavored hard-candy circles


Combine sugar , Corn Syrup, vinegar, water; stir still sugar dissolves. Cook to hard-crack stage (300*). Remove from heat; add butter and salt. Cool until mixture thickens slightly. Quickly drop from tablespoon over skewers placed 5 inches apart on greased cooky sheet to form 3 inch lollipops. Make faces with candy cirlcles. Makes about 16.

11/5/2009: Thursday Afternoon a band call,"Fire & Spice" was here to play some 50's & 60's music for everyone on campus to enjoy. We did have a lot of dancers and for those still in there seats they were tapping there feet to the beat!


Art Project

11/4/2009: This afternoon we had a small group of our ladies busy doing an art project. I had gone outside to gather leaves that had fallen from the trees, to have each one paint a few different ones with paint and them press them on to paper. It was fun to see all the different colors and all the different designs each one of them had done!

Sing Along



Once a month we have Sister Mary Ellen come and play the piano and so a sing along with the folks that was one of our clients favorites, they all love to sing!

Crafty Friday!

This was our Crafty Friday project, making Salted Dough Ghosts. Good exercise for those fingers. Everyone did there own variations of ghosts and other Halloween characters.










Salted Dough Ghosts:
Materials:
1 cup flour
1 cup salt
1/2 cup water
Bowl
Wooden spoon
Fine-point permanent black marker

Instructions:
Combine the flour, salt, and water in a bowl. Stir the mixture with a wooden spoon until smooth.
Divide the dough into 6 equal pieces and shape each into a ghost, flattening the base so it will stand up.
Microwave the ghosts on a plate one or two at a time for 20- to 30-second intervals until the dough is fairly firm (about 1 1/2 to 2 minutes in total). Let the ghosts cool (they can get quite hot).
Use a fine-point permanent black marker to draw on eyes and a mouth.

Halloween Celebration!

Tuesday October 27th, we had our 1st annual Halloween Celebration with the 4th residents. We played Halloween Jingo, Did a Cake walk, Had everyone guess how many candy corns were in a jar, and a costume contest. At the end they all enjoyed some sweet treats and lemonade. Everyone had a great time! Thank you for coming!

Culinary Circle

This morning we had our Director of Culinary Services Sheila, and Kathy came and do a food presentation for us. She showed the clients how to make Eggplant Lasagna with no salt being that we all need to watch our salt intake, we were all kind of hesitate at first thinking WHAT NO SALT?! There is no way that this can be good and on my goodness it was the best thing we had ever tasted! I would definitely make it for my family. It was a very easy dish to put together. Everyone should try it! We all had a great time learning how to make it, Thanks again Sheila and Kathy!


Eggplant Lasagna

Serves 6; 4x4-inch piece per serving
If you can, prepare this hearty lasagna a day ahead. Its flavors will be enhanced, plus all you'll need to do for dinner is toss a salad and make a quick fruit dessert while the casserole bakes.
Ingredients
Vegetable oil spray
6 dried lasagna noodles
3 cups chopped peeled eggplant
1 medium green bell pepper diced
1 large onion chopped
1/4 cup chopped fresh basil leaves or 1 tablespoon plus 1 teaspoon dried crumbled
3 medium garlic cloves minced
2 8-ounce cans no-salt-added tomato sauce
2 teaspoons low-sodium Worcestershire sauce
1/8 teaspoon salt
1/4 teaspoon fennel seeds (optional)
1 cup fat-free or low-fat cottage cheese
1 cup shredded part-skim mozzarella cheese
2 tablespoons shredded or grated Parmesan cheese

Cooking Instructions
Preheat the oven to 350°F. Spray a 12x8x2-inch glass baking dish with vegetable oil spray. Set aside.
In a large stockpot, prepare the noodles using the package directions, omitting the salt and oil. Drain well.
Meanwhile, lightly spray a large nonstick skillet with vegetable oil spray. Heat over medium-high heat. Cook the eggplant, bell pepper, onion, dried basil (if using fresh basil, add with the tomato sauce), and garlic for 10 minutes, or until the eggplant is soft, stirring occasionally. Reduce the heat to medium if the mixture starts sticking to the skillet.
Add the tomato sauce, fresh basil if using, Worcestershire sauce, salt, and fennel seeds. Bring to a boil. Reduce the heat and simmer for 15 minutes, or until the sauce has slightly thickened and the bell pepper is soft. Remove from the heat.
To assemble, lay 2 noodles lengthwise in the baking dish. Spread a scant 1 cup eggplant mixture over the noodles. Spread 1/3 cup cottage cheese over the eggplant. Sprinkle with 1/4 cup mozzarella. Repeat the layers twice, ending with remaining 1/2 cup mozzarella. Tuck in the ends of the noodles if overhanging. Cover the dish with aluminum foil.
Bake for 30 minutes.
Sprinkle with the Parmesan. Let stand for 5 to 10 minutes to let the cheese melt and make cutting easier.
Cook's Tip
When using fairly small amounts of cheese on top of a casserole, cover the dish with aluminum foil during the baking period to prevent the cheese from overcooking and drying out. Run the casserole under the broiler for a few seconds if you want to brown the cheese lightly.

Coffee and Chat!


Every morning when our client arrive we have a buffet set up on our counter with coffee, tea, cereal, muffins, toast and fruit. Start the day off right with a good breakfast and good chat with a friend. This was a special day we had two students from Bethel University who are Graduting in May to be nurses. Making Scarecrows!

We had a small group create some scarecrows to sit outside our entrance!

National Chili Month

This month is National Chili month. On Tuesday afternoon I had some of my ladies busy making some yummy chili and cracklin corn bread. We all enjoyed the chili and cornbread for our afternoon snack!


Chili

3/4 pound ground beef (85% lean)

1 medium onion, chopped (about 1/2 cup)

1 tablespoon chili powder

1 can (10 3/4 ounces) Campbell's® Healthy Request® Condensed Tomato Soup

1/4 cup water

1 teaspoon vinegar

1 can (about 15 ounces) kidney beans, rinsed and drained

4 cups hot cooked regular long-grain white rice, cooked without salt


Directions:
Cook the beef, onion and chili powder in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often. Pour off any fat.
Stir the soup, water, vinegar and beans in the skillet and heat to a boil. Reduce the heat to low. Cook for 10 minutes or until the mixture is hot and bubbling. Serve the beef mixture over the rice.
Tip: This dish is delicious served topped with shredded reduced-fat Cheddar cheese.



CRACKLIN CORNBREAD

1 1/2 c. corn meal

1/4 c. all purpose flour

1 tsp. baking soda

1 tsp. salt

1 lg. egg, lightly beaten

2 c. buttermilk

1 c. cracklings


Combine corn meal, flour, baking soda, and salt in a large bowl: add egg and buttermilk, stirring just until dry ingredients are moistened. Stir in cracklings. Place in a well-greased, 10 inch cast iron skillet in a 450 degree oven for 4 minutes or until hot. Remove from oven; pour batter into skillet. Bake at 450 degrees for 25 minutes or until golden brown. Yield: 8 to 10 servings.

Autumn Joys!

This fun little poem below was the insirparation for our fun craft project. I had gone out in the morning to the park across the street (Mounds Park) to gather all diffrent sizes and shapes of leaves. Each person had watercolor paint, paper and a pile of leaves. They painted the leaves and pressed them on to watercolor paper. After we enjoyed some wonderful warm apple cider, donuts and some good reminiscing.

Autumn Joys

I love to see the colored leaves

National Food Bank Week!

Last week was National Food Bank week. We made signs and attached them to boxes and placed them in different locations around the Marian of Saint Paul Campus. We are very impressed with the amount of food we have collected. Thank you to everyone who donated. We will be taking a group out on Tuesday afternoon to drop all of the food to the local food shelf.

This lucky lady is celebrating her 68th birthday on Tuesday October 20th, 2009, with her daughter who lives down in Florida. We will be celebrating her birthday upon her return with all of her friends here! Fay has been a client of "DayAway" since May 2006! We are so happy you are a part of our program! Rudy celebrated his 90th Birthday on Sunday October 18th, 2009 with all of his family and friends! It was so nice of him to stop by today so we could give him his gifts and birthday cake from all of his friends here. Rudy has been a client of "DayAway" since July 2002. Crafty Friday!



Our ladies love to do all kinds of crafts. So, we have made Fridays our day of all kinds of craft projects. Here, one of the clients is painting a butterfly that will go onto a window or a door so the light can shine through and show all the pretty colors. Another client decorated a bag with some fun designs in puff paint.

Thomas has been a client of the Adult Day Program since May 2008! We were so happy that he joined all of his friends here in "DayAway" to help celebrate his 84th birthday today! We are so lucky to have you as a part of our program!
